Saucy Affair Cheesy Cheddar

Cheddar cheese is made from pasteurized, standardized cow's milk. Mesophilic starter cultures are used and, in large cheese factories, defined-strain starter systems are common. The milk is renneted at ~30 °C and the curds/whey mixture is cooked to 37-39 °C. After whey drainage, the curds are cheddared.
